Apricot Oatmeal

1 cup Water or Coconut Milk
1/2 cup Oats
1 tsp Smart Balance Light butter
1 Apricot
Sea Salt (as desired)
Cinnamon (as desired)
Brown Sugar (as desired)


Mango Madness

1 Mango
1 Apricot
1 handful of Kale
1/3 cup Raspberries
1/4 cup flax seeds
1/3 cup egg whites
1 tbsp Almond Butter
1 tbsp Ricotta Cheese
4oz Peach Activia Yogurt
Coconut Water (as desired)

Berry Berry Berry Good!

1/3 cup Blueberries
1/3 cup Raspberries
3-5 Large Strawberries
Handful of Kale
1/4 cup pumpkin seeds
1/3 cup egg whites
1 tbsp Almond Butter
1 tbsp melted Coconut Oil
Coconut Water filled to the line

Tofurkey Egg White Scramble with Grits

What you need:
Fresh Grits or Quinoa
Trader Joe's Italian Tofurkey 
Egg whites 
Mini sweet peppers
Ricotta cheese

Preparation:
Bring water, salt, and 1 tablespoon butter to a boil in a 3- to 4-quart heavy saucepan, then add grits gradually, stirring constantly with a wooden spoon. Reduce heat and cook at a bare simmer, covered, stirring frequently, until water is absorbed and grits are thickened, about 15 minutes.

In a small saucepan/skillet scramble egg whites and add ricotta cheese.

In another small saucepan/skillet grill Tofurkey with peppers and season to taste.

Baked Tilapia with Risotto and Kale Salad

What you need:
Fresh Tilapia 
Risotto
Fresh Kale
Fresh lemon
Butter
Apple cider vinegar
Honey
Sea salt
Black pepper

Preparation:
Marinate tilapia in lemon and butter and bake for 25 min

Dressing - in a small dish add lemon, apple cider vinegar, honey, salt and pepper mix thoroughly and pour evenly over fresh kale

Tofurkey Italian Sausage with Sweet Potatoes and Greens

What you need:
Trader Joe's - Tofurkey
Italian sausage
Fresh Spinach
Fresh sweet potato/yams
1 tbsp coconut oil 
1 tbsp sweet almond oil
butter
brown sugar
cinnamon
sea salt

Preparations:
Boil potatoes for 15-20min then rub potatoes with oil and salt then bake until soft and no longer firm and add butter, sugar and cinnamon
Grill tofurkey over low heat for 5-10min
Sauteed spinach in oil for 5-10min
