My
first attempt at making black eye peas. Altering the typical soul food recipe by substituting the following:
What you need:
Olive oil
Apple cider vinegar
Cayenne pepper
Black pepper
Sea Salt
Garlic
Sweet mini peppers
Preparations:
Sauteed in a 1/2 cup of extra virgin olive oil and 1/2 cup of
apple cider vinegar with a 1/2 teaspoon of cayenne pepper, 1/2 teaspoon
blk pepper, 1/2 tablespoon sea salt and a 1/2 tbsp of garlic:
1 mini red bell pepper; 1 mini
orange bell pepper
Then in a large pot add a cup of rinsed black
eye peas and 2 cups of water and bring to a boil, then let simmer for 1 hour, remove from heat and let stand for 15min.
Note: time may vary pending desired texture of beans. I prefer soft.
Bon Appetit!
So what's a Pescetarian Clean Eater anyways? According to Wikipedia, "Pescetarianism is the practice of a diet that includes seafood, but not the flesh of other animals. And much like a vegetarian diet but also includes fish and shellfish." According to livestrong.com, "clean eating means consuming only fresh fruits and vegetables, whole grains and lean proteins instead of pre-packaged, processed foods or fast food..." My blog offers preparations for recipes I enjoy as a pescetarian clean eater.
